RECEIPE OF DHOKLA:
Dhokla is a pure vegetarian
food. This is basically originates from the Gujarat. It is made with a
fermented batter derived from Besan (Gram Flour). Dhokla can be eaten for
breakfast, as a main course, or as a side dish. It is easy in process and
nutritious in properties.
Ingredients:
Besan/Gram
Flour: 100-150grams
Chilli
powder: half spoon
Eno/Meetha
Soda: half spoon
Kari
Patta: 15-20 Leaves
Green
Chili : 4-5 pieces
Sugar:
01 spoon
Lemon:
01 piece
Salt:
half spoon/ as per taste
Mustard:
1-2 spoon
Method:
Make
mixture of gram flour/besan with water and few pinch of salt. Add. Baking soda
or Eno. Mix well few minutes then keep it in flat pan. Put the water in
pressure cooker and let it hot. Then keep this flat pan inside pressure cooker.
Close the cooker lid. Remove the cooker visil. And let it cook for 15minutes
approx in steam. After 15minutes check the dhokla by using tooth pick. Cook
till done - when you touch the surface of the Dhokla your fingers should come
away clean. If it will be proper cooked remove from the gas flame. Allow the
steamed Dhokla to cool slightly and cut into 2" squares.
Now
take a frying pan and put 03-04 spoon of vegetable oil. After heating add few
mustard with green chilli. When mustard becomes brown/black add Kari patta,
leave for 01 minutes. Now add water approx one glass, now add 1 spoon sugar,
salt, on lemon juice and leave on gas flame for 05 minutes and off the flame.
Sprinkle this mixture all over the prepared Dhokla. Keep aside for 10 minutes.
Garnish with the chopped coriander and serve with Tamarind Chutney or Mint Coriander Chutney.
Duration: 30-35minutes.
